Food Preservation 101

Michelle McKenzie with Virginia Food Works, will present this workshop for farmers who are interested in creating value-added products using commercial canning in preserving food for resale. She will provide information about the basics of food preservation as well as services, support and resources that are available from the cannery.

Topics in this workshop include:
• A checklist of necessary steps required to process foods for retail sale
• FDA and VDACS label requirements
• Scaling recipes for bulk production
• Testing of product pH
• Sourcing of raw ingredients
• Selecting containers

Virginia Food Works is a non-profit organization that works with existing and prospective producers of value-added foods, providing expertise and guidance on the steps involved from product development to final production. They offer contract packing (“co-packing”) services, specializing in the creation of value-added foods from locally grown ingredients.
